At the Bistro Brendan has fashioned a menu of refined Modern American cuisine where, "We look to Italy in the Spring and Summer, France in the Fall and Winter, while remaining firmly ensconced in America." Brendan pursues his passion for delivering honest, fresh, and uncomplicated food to his guests. A premium is placed on fostering relationships with local farmers whenever possible.

In 2006, Circle Bistro was nominated as Informal Dining Restaurant of the Year by the RAMW and Brendan nominated as Rising Star of the Year.
